Chinese Yam, Apple & Corn Soup (淮山苹果玉米汤)



Now that we eat at home, I want to try and make more soups for dinner. Got this recipe from The Chinese Soup Lady.


Ingredients
Chinese Yam (淮山), about a 30cm length, peeled and cut into small pieces
2 small apples, cut into small pieces
1 corn cob, cut into fifths
3 pcs of pork bones (we don't really like to eat the meat in soups thus it is more economical to buy pork bones for soup)

Method
Parboil the meat and discard the water
Place everything else into the pot and add about 1.5L of water
Bring to a boil for about 10min
Turn the fire down and allow to simmer for at least an hour.
(I either use a thermal pot usually or a slow cooker. However, today, I needed to leave the house right after boiling the soup, I placed the whole pot into the oven and set the oven at about 125degC and left it for about 2 hours).
