Scallop Rockefeller (Copycat Tim's Restaurant)



Ingredients:
Scallops with shell, washed and cleaned
Large purple onions, chopped
Mayonaise
Bacon, chopped
Parmasan cheese

Method:
Grill onions with a little salt until soft and caramelised, set aside.

Assembly:
Top the scallops in this order (bottom - up):

  1. grilled onions
  2. mayonaise (covers the scallop)
  3. bacon
  4. parmasan cheese
Preheat oven at 180dC
Bake for 15min or until scallop bubbles and turns golden brown
