This is the way I've been roasting the turkey for the last couple of years that I held the Christmas party.
Ingredients
9-10 lb turkey
a good chunk of butter (about half a block)
4 cups of chicken stock (I use Swanson)
2 tbsp dried parsley
2 tbsp dried minced onion
2 tbsp seasoning salt
Preheat oven to 175 degrees C. Rinse and wash turkey. Discard the giblets or you can add these to pan if these are anyone's favorites.
Place turkey in a roasting pan. Separate the skin over the breast to make little pockets. Put good knobs of the butter on both sides between the skin and breast meat. (keeps the meat juicy)
Rub salt all over the turkey.
Sprinkle in the parsley flakes and minced onion into the stock. Pour over the top of the turkey.
Cover with foil and bake in preheated oven for 3 - 4 hours (depending on size of bird).
For the last 45 minutes or so, remove the foil so the turkey will brown nicely.
