Baked Macaroni


The boys love this baked macaroni. It's my mum's recipe actually and it is so easy and so freezer friendly.

Ingredients (Makes about 3 meals for us):
400g macaroni
1 can of Campbell's Cream of Mushroom
2 eggs, beaten
about 4 tbsp of Parmasan cheese
150g of streaky bacon (about 6-8 rashers, panfried, chopped into small pieces)
4-6 hotdogs, cut into small pieces
2 chicken breasts, cooked and cut into small pieces (I usually season and grill them on the pan.)
selection of favourite vegetables:
  • a small broccoli floret, cut into small pieces
  • a small cauliflower floret, cut into small pieces
  • brown button mushrooms or any type of mushroom
  • red/ yellow or green peppers, cut into small pieces (I don't put this cos the boys do not like the taste of it)
For assembling:
500g cheddar cheese, shredded

Directions:
Boil the macaroni in a pot of salted water until al dente. Strain and set aside.
In a huge bowl, mix all the ingredients together. Add in the mushroom soup and eggs.
Layer the macaroni mixture in a baking/ pyrex/ disposable aluminum trays. (note: the above ingredient amount fills about two 9x9 trays or six 6x6 aluminum trays)
Top the mixture with cheddar cheese.
Bake at 170deg Celsius for about 45mins or until the cheddar has melted and crisped on the surface.

Freezer option:
I usually prebake the macaroni until the cheddar has just melted, cool it and then pop it into the freezer. To eat, either thaw the macaroni overnight in the fridge and then bake as per normal or put the frozen tray into the oven at 250deg Celsius for about 15min and then turn it down to 170deg Celsius for 30min.

These disposable aluminum trays are about 6" x 6", just nice to fit 1 meal/ 2 people. And it makes it easy on busy nights where we can just eat and toss! :P
