Improvised Gyudon

The boys love Japanese food and our family loves the beef bowls that we've tried in Japan. We usually get our fix from Yoshinoya. I bought a package of Shabu beef from QB and was thinking of turning it into Sloppy Joes actually, but decided in the end to try making the Gyudon. This is where I got a recipe for the Gyudon, but since I didn't have any of those Japanese ingredients at hand, I improvised.

Ingredients (estimated):
500g Shabu beef
2 tbsp black rice vinegar
2 tbsp brown sugar
2 tbsp light soy sauce
1 tbsp dark soy sauce
1/3 can Swanson Chicken Stock
1/2 cup water
2 white onions

Directions:
Mix the marinating ingredients in a bowl.
Fry onions until soft.
Add beef and fry till almost cooked.
Add the marinate in and bring to boil.
Add more water if desired.
Simmer until desired texture.
Serve with rice.

Note: The beef stew is freezer friendly. Just warm it up and serve over rice.
