Hubby was asking for baked rice (and I think he's hoping that I'll eventually be able to replicate Cafe de Coral's Pork Chop Baked Rice :P) Thus I googled and found the Noob Cook's Broccoli, Potato & Sausage Baked Rice and started improvising from there. Well, my baked rice got the seal of approval and it looks like it's a keeper! :D
Ingredients (serves 4):
11/2 cups rice (I use a mix of polished & unpolished brown rice)
Water to boil the rice (depending on how your usually like your rice)
30g butter, melted
5 cloves of garlic
handful of frozen corn nibblets
6 slices of streaky bacon
2 chicken breasts
3-4 tbsp condensed soup (I used Cambell's Cream of Mushroom and Chicken)
300g Shredded Mozzarella & Cheddar Cheese mix (enough to cover the rice when baking)
salt and pepper
Directions:
Cook rice as per rice cooker instructions, but adding the garlic cloves and melted butter into the cooking water.
When rice is cooked, fluff it up and at the same time, mash the soften garlic into the rice.
Meanwhile, season the chicken breast with some salt and pepper and put it on the grill. Once done, cut into bite sized pieces.
Fry the bacon till crispy and chop into small pieces. Save the bacon drippings to mix into the rice.
To assemble for baking:
Mix the rice, chicken pieces and bacon bits and place the mixture in a glass bake ware.
Smear about 3-4tbsp of the condensed soup on the surface.
Sprinkly generously with the cheese mixture until the surface is all covered.
Bake in a 170 degC oven for about 20min or until the cheese melts and turns golden brown.
Serve warm.
