Needed to use up the stuff in my cupboard and found this recipe on Allrecipes.com.
Ingredients (Makes 12)
1 1/4 cup (100g) oats (Origins organic oats)
1 1/4 cup (295ml) milk (can be substituted with soy milk/ chocolate milk)
1 egg
1/2 cup (120ml) vegetable oil
1/2 cup (110g) brown sugar (Original recipe calls for 3/4 cup (165g) but I reduced it because I used 1/2 chocolate milk and added chocolate chips)
3/4 cup (125g) chocolate chips (may be replaced with nuts)
1 1/4 cup (155g) self-raising flour (add 4tsp baking powder if plain four is used)
1tsp salt
2 tbsp coarser brown sugar for topping
Method
Preheat oven to 200 degC then turn it down to 180 degC before baking starts.
Soak oats in milk for 15 mins.
Add egg, oil, sugar, chocolate chips (and/or nuts) into oat-milk mixture.
Combine the dry ingredients (flour, salt).
Add oat mixture to flour mixture (wet to dry)
Stir until everything is just combined. Do not over stir.
Fill each muffin cup till about 2/3 full.
Sprinkle tops with the coarse sugar (and nuts if any).
Bake at 180 degC for about 20 - 25 min
