Hummus. Easy to make, nutritious to eat!
Ingredients:
1 can (425g) chickpeas (or garbanzo beans)
1/4 cup peanut butter (substituted the tahini)Juice of 1 lemon
Garlic (1-2 cloves), minced
Salt
1/2 tsp cumin
2-3 tbsp olive oil (may need more when using peanut butter)
2-3 tbsp water
paprika
Olive oil (for serving)
Method:
In a food processor/ blender:Combine lemon juice & peanut butter Blitz for about a min to whip it up. Add olive oil, minced garlic, cumin, salt Blitz another 30s, scrape the sides of the processor. Drain and rinse can of beans. Add beans to processor and process for 1-2min till smoothAdd more olive oil / water if the mixture is too thick for the processor to move.
Serve:Sprinkle paprikaDrizzle with olive oilServe with warm pita or crackers
