Ondeh Ondeh


I love the taste of gula melaka and have always loved ondeh ondeh. After looking around at recipes, it seemed easy enough for me to try my hand at it!

Ingredients:
(makes about 40 -45 ondeh balls, about 5cm in diameter)

1 small sweet potato, steamed (about 200g)
200g glutinous rice flour
120ml cool water (more if you want a softer ondeh)
1tsp pandan essence (or fresh panda leaf extract)
100g gula melaka, shaved
about 100g Fresh shredded coconut  (I used desiccated cos I could not get them the other day)
Pinch of salt

Method:

Dough:
Mash the sweet potato with a fork.
Add the flour to the sweet potato and mix it in till it becomes crumbly.
Add panda extract to the water.
Add water slowly and knead to form a pliable dough.
Roll the dough and divide it into equal portions (i.e. 40 pcs)
Flatten each piece into a cup-like shape.
Put a teaspoonful of the shaved gula melaka into the cup and seal the edges.
Roll the dough back into a ball.

Cooking:
Cook the balls in a pot of boiling water.
The balls are done when they float to the surface.

Serving:
Add a pinch of salt to the shredded coconut for some taste.
Remove the cooked balls from the water and roll them in the shredded coconut.
Cool and serve.
