Chocolate Lava Cake





Kiefer loves this. Finally tried making it and what's more, made it in a muffin tin. Easy peasy.

Ingredients
100g semisweet chocolate chips (Hershey's)
100g unsalted butter, cut to small cubes
2 eggs
5g caster sugar (Original recipe gave 50g. I used just a tsp of sugar cos the semisweet chocolate chips are fairly sweet)
20g self-raising flour


Method
Melt the chocolate chips together with the butter in the microwave in 30s bursts.
Stir to ensure that the chocolate and butter melts into a smooth liquid.
Whisk up the eggs with an electric whisk until light and fluffy. (edit: can skip the whisking and add eggs directly to melted chocolate)
Add the melted chocolate and stir with spatula to combine well.
Add the flour to the mixture and stir to combine well.

Grease up the muffin tins. Be generous with the greasing so that the cakes come out easily.
Pour the batter into the wells.
Bake at 230 degC for 8min. (*ovens may vary. I totally cooked the cake through when I did 10 min)

The cakes should be a little concave in the middle when done. That indicates the runny centre.
