Easy *fill in the blank* muffins



Still testing out the new oven and so wanted to find a simple muffin recipe to try. Got this basic recipe from All Recipes.com. However, because I only wanted to test the oven, I halved the recipe and reduced the amount of sugar added. Overall, a nice muffin that was not too sweet.

It's called a *fill in the blank" because the blueberries can simply be replaced with pretty much anything. I didn't have enough blueberries and so I chopped up some frozen strawberries and dunked those in as well.

Ingredients

110g butter, soften
250g self raising flour (or 250g plain flour + 2 tsp baking powder)
200g sugar (original recipe says 1:1 ratio with flour)
2 eggs
125ml milk
1tsp vanilla extract
1/2 tsp salt
225g frozen blueberries (prefer using frozen, coat them with flour before tossing them into the batter)

Method
Cream together sugar and butter until the butter becomes pale and lighter in colour.
Add in eggs and mix in well.
Add vanilla extract.
Add in milk, flour and salt.
Mix well to combine.
Add in blueberries (or any add-ins) and mix well.

Fill muffin cups up to 3/4 full (1 ice cream scoop per cup).
Bake at 180degC for about 25-30min.
