Was just mindlessly watching youtube and came across Ochikeron and saw her Matsusake Gohan recipe and Tuna and Shimeji Mushroom Ponzu rice. I had shimeji mushrooms in my fridge and thought "why not try a mushroom rice". This was a totally "anyhow dump" ingredients into the rice recipe. I didn't have any of the seasonings she had, other than the mushrooms. :P
Ingredients (for 2 adults, 2 kiddos)
1.5 cups rice
1 pkt brown shimeji mushrooms
5cm chunk of carrot, cut into strips
1 tbsp rice wine
1 tbsp soy sauce
1/2 cup chicken stock (I used Swansons)
Water, to make up to amount required to cook rice
Method
Mix all the seasoning into washed rice.
Add water and stock. Stir.
Add mushrooms to the top of the rice.
Cook as usual
Toss well when cooked and serve
