Steamed Pork Ribs with Fermented Soy Beans (Tau Cheo)

L-R: cold tofu, steam pork ribs, stir fried broccoli with scallops

Mum used to make this and I loved it. Loved pouring the gravy all over my rice. Mum made it with some cut chilli added, but I leave it out cos Kiefer still doesn't take spiciness.

Ingredients (for 4 people):
200g pork ribs (the short ones, mum says to tell the butcher that I want ribs for steaming).
1 tbsp Tau Cheo, roughly mashed/ chopped with a knife
1 tbsp plum sauce (Woh Hup brand)
3-4 cloves of garlic, minced

Method:
In a small pan, saute the garlic until fragrant (don't burn), add the tau cheo in and fry till everything is fragrant.
Turn off the fire, and add the tau cheo-garlic mix to the plum sauce.
(Add chopped chilli)

Give the short ribs a rinse with cold water
Add the plum sauce/ tau cheo mixture to the ribs and mix well.
Leave until ready to steam
Steam for 20 min until the meat is cooked
