Saba Shioyaki (Grilled Mackerel)





Surprisingly easy to make.
Either quickly salt unseasoned mackerel or buy ready salted shio saba for a quick meal on busy nights. 


Ingredients (for 4)
4 fillets mackerel (saba)
4 tbsp sake (or any cooking alcohol I can grab in the kitchen)
1 tsp salt (Himalayan pink)
Grated daikon
Lemon slices

Method
Coat fish with sake
Pat dry with paper towel and then transfer fish to baking sheet lined with bake paper
Sprinkle salt on both sides of fish and let sit at room temperature for 20 minutes.
Pat dry again after 20 min
*Fish should be really dry before it goes into the oven. Or else the fish will be steamed rather than grilled.
Place fish, skin side down on baking sheet and bake for 15 - 20 minutes, or until flesh is golden brown.

Serve grilled mackerel with grated daikon (with some soy sauce on daikon) and a lemon wedge on the side.
