Thai Basil Pork



 

An easy to do dish. Can be made with either pork or chicken. The important ingredient to have in this dish is the Thai Holy Basil. I've substituted with sweet basil and Thai basil before but the taste is different.

Ingredients (serves 4)
3 Shallots, sliced
7 cloves Garlic, sliced
Chilli (bird's eye chilli)
500g ground pork (or chicken)

Seasoning sauce:
1 tsp sugar
1 tbsp fish sauce
1 tbsp light soy sauce
2 tbsp dark soy sauce
2 tsp oyster sauce

Deglazing:
1/3 cup chicken broth/ water
Holy Basil leaves (1 huge handful)

Method
Over medium high heat, fry shallots and garlic until fragrant
Turn to high heat, add ground pork and fry until pork crisps up
Add seasoning sauce and fry another minute or so
Add broth/ water to deglaze the pan
Cook the water off
Add basil and cook until it wilts
Serve over steamed rice
