Easy Shepherd's Pie


Ingredients:
Potato Mash Top:
4 - 5 Russet potatoes, boiled, peeled, mashed (as per your liking) OR
Leftover mashed potatoes (I used the Garlic Mash that was leftover from the Christmas dinner)
note: I use Russets for mashes cos they are nice and powdery when cooked and mashed.

'Pie' filling:
300g minced topside beef
1 large yellow onion, chopped
Handful or frozen corn/ peas
1/2 cup tomato puree

Seasonings:
A pinch of dried thyme
A big pinch of dried oregano
1 tbsp Worcestershire sauce/ HP/ A1 steak sauce
1tbsp red wine
Salt and pepper to taste


Directions:
Saute the onions in oil until soft
Add the corn and continue to saute
Add minced beef and and fry till beef is cooked
Add tomato puree to the mix
Add seasonings
Place cooked beef mixture at the bottom of a glass/ pyrex baking bowl/ tray
Place mashed potatoes on top.
Using a fork, make some grooves on it so that it bakes nicely with the golden brown marks
Bake in 170 degC oven for about 30 min or until the tips of the potatoes are nice and brown
