Oven Roasted Vegetables

Seen here as a side to the crockpot roasted chicken
Easy side dish to accompany any meat meal. The vegetables can be roasted on their own or placed in the same baking dish as the main meat to be roasted all at the same time. As I made this tonight as a side to my Crockpot Rotisserie-styled Chicken, these vegetables were roasted on their own.

Before the vegetables go into the oven

Ingredients:
A variety of root/ stem vegetables (i.e. potatoes, carrots, pumpkin, zucchini)
favourite herbs (e.g. thyme, dill, oregano, rosemary are all great choices. Choose something that complements the main dish that the roasted vegetables will be accompanying)
salt and pepper to taste

Method:
Cut all the vegetables to roughly the same size for even cooking
Drizzle the bottom of the roasting tray with olive oil. Be generous.
Place all the cut vegetables on it.
Season with herbs, salt and pepper
Drizzle more olive oil over the vegetables
Roast in oven at about 170 degC for 30 min
